top sirloin steak (boneless ribeye or beef tenderloin)
mushrooms
onion, garlic, butter
beef stock
heavy whipping cream
sour cream
dijon mustard
Worcestershire sauce
parsley
flour

Steps
Thinly slice beef into strips and sear in oil until it browns (~30 seconds each side). Be careful not to cook too long or the beef will become chewy so cook in batches.
On butter, caramelize onions with mushrooms for around 10 minutes.
Add garlic and flour.
Add broth to scrape the pan. Optionally you can deglaze using brandy.
Add heavy whipping cream to simmer. Then temper and add sour cream.
Stir in Worcestershire sauce and mustard. Season to taste.
Add the beef with juices.
