#ChefEddPresents — Chicken Tinola

This undeniably Filipino dish is the perfect comfort food. I always crave for it when I'm feeling sick as the combination of moringa leaves and chicken broth simply makes you feel better inside out. It's definitely healthy, aside from being flavorful and appetizing, with the right contrast of the salty chicken broth and muted sweetness of the papaya.


One thing I was not aware of was that green papaya can actually be dangerous if eaten raw. It is a powerhouse of vitamins and enzymes for fighting infections and maintaining a glowing skin, but it also contains latex, which can induce uterine contractions, obviously making it more dangerous to pregnant women. The papain content in the latex is also known to increase chances of embryotoxicity and weaken the vital membranes of the fetus. Adding to its bad rep, traces of latex is also present in ripened papayas, so moderation is key in consumption.


Ingredients

  • 1 kg chicken (thigh fillet)

  • 1 pc green papaya

  • ginger

  • garlic, onion

  • chicken broth cube

  • chili leaves

Optional

  • malunggay leaves

  • sitaw (long beans)

  • cabbage

Steps

  1. Sauté ginger, garlic and onion. Add chicken.

  2. Add water to level chicken. Simmer and add broth cube.

  3. Add papaya until tender.

  4. Add there rest of the vegetables and remove fire. NOTE: the vegetables get soggy easily so remove fire immediately!
