This little gem of a dish is a godsend for people who love spicy food. I actually have never tasted chili con carne before, and ever since it was mentioned by Lily and Marshall on How I Met Your Mother, I've been curious. So with a new ambition to "over-cook" myself, armed with at least 10 spices, I dove right into this Mexican (or Texan) classic.
The good thing about the dish is it's good with rice, with tacos or on its own so the lazy chef that I am, I'm pretty much covered for the rest of the week. UPDATE: Yeah, it lasted for several days unrefrigerated, even.
Ingredients
1kg ground beef
1 green pepper
2 tbsp chili powder
1 pc beef cubes
1/8 tsp cayenne pepper
1/4 tsp cinnamon
1 tsp cumin
1 tsp oregano
2 cans or tomato paste and tomato sauce
1 can (240g, drained) red kidney beans
olive oil, onion, garlic, salt
tortilla chips
Optional (toppings)
sour cream
jalapeno or bell pepper
cheese
Steps
Sauté beef until cooked. Add onion, garlic, cumin.
Add all seasonings.
Add beans and simmer.
Top with sour cream, cheese and jalapeno/bell pepper/celery/parsley.
