#ChefEddPresents — Cream-filled Herb Chicken

This is the recipe I entered a contest organized by a local cream cheese brand. It didn't win but was definitely a lot of fun making and researching, not to mention healthy.


Ingredients

  • Chicken breast

  • cream cheese

  • mayonnaise

  • mozarella, parmesan

  • spinach, cilantro, parsley

  • oregano, thyme, garlic

Steps

  1. Chop spinach and cilantro. Put in bowl.

  2. Mix softened 5oz cream cheese, 1tbsp of mayonnaise, pinch of salt and garlic.

  3. Mix in cheese.

  4. Cut 3/4 way through the chicken and fill in with cream cheese mixture.

  5. Seal chicken with tooth picks.

  6. Season with more herbs and spices.

  7. Fry the chicken until the outside is slightly seared.

  8. Bake at 210C in the oven for 15 minutes. Serve with spring onion, tomatoes, parsley, lemon, rosemary.
