#ChefEddPresents — Lengua ala Mameng

This is a classic Filipino dish made out of cow's tongue cooked in mushroom sauce and melted cheese. My mameng's version of this is one of the best I have tasted so when the first client of our catering business requested this dish, it is a no-brainer that I would ask for her help. Funny enough, she recommended Chef Tatung's YouTube channel.


Ingredients

  • ox tongue (beef)

  • white onion, garlic, pepper, salt, laurel, butter

  • cheese

  • mushroom (drained from can)

  • cream of mushroom soup

  • all-purpose cream

  • cream of mushroom

Steps

  1. Boil ox tongue with pepper, and laurel leaves. Add only a little salt since you will need the stock later. A whole tongue may take 3 to 4 hours (1 to 2 hours with pressure cooker) so manage your time accordingly.

  2. Remove from heat and remove the skin of the tongue. Slice into thin slabs (or diced cubes ala menudo)

  3. On butter, sauté garlic and onion and mushrooms.

  4. Add the lengua and beef stock.

  5. Simmer and add all purpose cream and cheese. Season to taste.
