I've never really been a fan of the "tomato sauce" family of Filipno dishes (i.e. mechado, afritada, caldereta, menudo) but learning how to make at least one of them seems like a requirement for anyone .
Ingredients
3/4 kg chicken (I prefer thigh fillets, but it's your call)
250g tomato sauce
1pc large potato
frozen peas
bell pepper
carrots, cubed
onion, garlic, butter
salt, pepper, umami
Optional
half-block quick-melt cheese, cubed
evaporated milk
pineapple chunks
Steps
Sauté chicken in onion and garlic.
Add tomato sauce until it simmers. Add seasonings.
Add cheese.
Add carrots, then potatoes and bell peppers.
Add evaporated milk.
Remove flame and add softer ingredients: pineapple, peas
